Check this awesome Pizza Focaccia I made using the new @oonihq Halo Core spiral mixer 🌀When making any type of pizza, bread or focaccia dough, having the breaker bar and dough hook combination is a game changer and with the new compact version of the Halo you can now make smaller batches in your own home whilst not having to compromise on dough strength 💪🏼 As you can see from the end result of this focaccia, I’ve achieved an incredible internal light and airy structure 😍

For anyone wanting to recreate this high hydration beauty, check out my full recipe below 👇🏼 
•
- 639g Strong Bread Flour (higher protein % the better)
- 498g Cold Water
- 4.5g Instant Yeast
- 13g Salt
- 19g Extra Virgin Olive Oil
- Tomatoe Sauce
- Grated Mozzarella

- Add the flour and yeast to the Halo Bowl and mix on a low speed until combined
- Gradually add 90% of the water mixing on a medium speed until roughly combined (usually 3-4 minutes)
- Cover the dough and rest for 20 minutes
- On a medium speed add the salt and the remaining water (gradually) and mix until fully absorbed 
- Add the oil and co time to mix until a pumpkin shape is achieved
- At any point during the process, if the dough seems to be a bit too wet and not coming together, cover and rest for an extra 20 minutes 
- Form the dough into a ball and place into a lightly oiled sealed container (Halo bowl and lid is perfect for this) before storing in the fridge for 24 hours 
- Transfer the dough into a 12”x12” oiled pan and press out towards the sides of the pan
- If the dough doesn’t reach the sides, cover and rest for 20 minutes and repeat 
- Let the dough rest, covered for 1.5-2 hours
- Add your toppings, dimple, and bake in your oven (220°C) for 20-25 minutes
